Activated Nuts Coconut Milk Tahini Spirooli Salad

Today’s food adventure was all about using new ingredients and a new technique.

Hope by the title and photo, your curiosity continues to peak! ๐Ÿ˜‰

Hands up, who goes into a food store, finds something interesting, GRAB it (better than YELLING at it lol) and it makes its way “mysteriously” into your pantry or cupboard drawers, only for you to “realize” you have never used the ingredient, you put it “on the list” one day to do!

Then, on the “strangest” of days, when you have that “foggy” look on your face while in the kitchen, the ingredients “JUMP” out at YOU!

I swear my pantry (which I might add is “VERY well stocked” with mystery ingredients ๐Ÿ˜‰ ) is um, well, how do I say? Possessed! TRUE! ShockedShockedShocked

Today (actually yesterday, but will mention at the end of this post ๐Ÿ˜‰ ) the Activated Nuts came flying out at me and YELLED “PLEASE!!! Include us in your recipe! (The one I didn’t know I had saved in my What’s On The List folder and that I was going to make lol)

When I initially saw SUPERCHARGED RAW PAD THAI on Supercharged Food, not only did I “know” it would be “on the list” but I also had a Spirooli I buy and had not used to date too!

OK, food confession time! ShockedShockedShocked

I have this “THINGEmbarassed

I have had this “THINGEmbarassedfor many years now! I get all excited about purchasing my next gadget, appliance (within reason ๐Ÿ˜‰ ).ย  I get it home and instead of opening it right away, it sits in the box (as IF I am worshiping it), AND it sits AND it sits.

The “length” of time it SITS varies from gadget to gadget. I have NO IDEA why I do this.

Sometimes, I even read the book figuring THAT will give me the confidence to remove it from the box, let alone, actually “use it” (which is what I initially bought it for) too! ๐Ÿ™‚

SO out came the Spirooli today! As “from the box” I heard “PLEASE TAKE ME OUT! I TOO WANT TO PLAY!” lol it is AMAZING some of the food ingredient and food gadget conversations I have! ๐Ÿ˜‰

I had never used Premium Coconut Milk Powder before and it too wanted to be included in today’s recipe too! I swear I “heard” it say, “I am a friend of the Activated Nuts too!” lol

With my new Spirooli out of the box, washed and ready to use, I then had the decision which “sets” of blades I wanted to use as it comes with three different ones for use on potatoes and veggie too! ๐Ÿ™‚

I present my “adapted” recipe Activated Nuts Coconut Milk Tahini Spirooli Salad

“What ARE Activated Nuts?”, I “hear” you say? ๐Ÿ˜‰

I “LIKED” Amanda of Easy Peasy Organic ‘sย  “simple” explanation of Activated Nuts…“more of the good stuff in the nut is used by our bodies!”

When I sawย  Make Your Own Activated Almonds At Home on I WAS “inspired” to do, but because I had some on hand already, I might have to put Amanda’s recipe “on the list” to make “one day” too!

NOTE
Please do not allow the list or amounts of ingredients throw you off in making this wonderfully healthy salad with LOTS of flavor and C-R-U-N-C-H! I always like to use up what I have available or left in my refrigerator (which is VERY well stockedย ๐Ÿ˜‰ too! )

Ingredients for the Salad
1 cup zucchini, spiral
2 cup cabbage, finely sliced
3/4 cup activated nuts
1/2 cup brown mushrooms
1/2 cup coriander, finely sliced
1/2 cup broccoli florets, cut into small pieces
1/4 cup cauliflower florets, cut into small pieces
1/4 cup carrot, peeled and grated
1/4 cup spring onions, asian style sliced
1/3 cup red capsicum (aka bell pepper or sweet pepper)
1/3 cup baby spinach, finely slices
1/3 cup grape tomatoes, deseeded, finely diced
bean sprouts optional
spiraled raw beetroot to look like noodles, optional

Chop, slice, dice all ingredients above in a large bowl.

Prepare the coconut milk; whisk salad dressing until well blended; adjust for personal taste (recipe below)

Toss and enjoy!

Ingredients for the Dressing

3/4 cup coconut milk
1 tablespoon olive oil
3 tablespoons tamari
3 tablespoons tahini
2 tablespoons lemon juice
3 garlic cloves, minced
1 teaspoon grated ginger
1 – 2 red chilli, sliced
1 tablespoon Xylitol *(feel free to substitute sugar ๐Ÿ˜‰ )

NOTE
Since posting recipes using Xylitol, I am getting a number of questions not only about Xylitol, its uses and why I use, but I am also separating “Facts from Fiction” as there is A LOT of misinformation that get circulated. I believe in providing facts to people for them to make their own mind up.

Not ALL Xylitol products are the same and in my opinion is unfair to “broad stroke” Xylitol companies who produce inferior products with those companies whose products meet international standards and certification.
Per Nationally Sweet Xlear Australia:
“Naturally Sweet Xylitol is sourced from one of the world’s major suppliers & actually meets pharmaceutical standards and is, like all of our products, certified as GMO free! Also Kosher and Halal certified.”
I have been using Xylitol for a long time now and am A LOT happier and healthier for using the products too!

* The Naturally Sweet Xylitol was sent to me to try and create some unusual recipes!ย  The words are my own thoughts and honest review.
I previously used Xylitol in my daily life too! ๐Ÿ˜‰

FOLLOW UP USER’S NOTE
I am “particularly” proud of today’s post which was “meant” to be yesterday’s post.
While cleaning the initial VERY sharp blade, I ended up slicing the tip of my finger which required 4 stitches too!

My “Hint and Tip” (pun intended ๐Ÿ˜‰ ) is to keep all fingers away from the VERY sharp blade. ๐Ÿ˜‰

It was a “simple” gadget novice accident and does not reflect poorly on my WONDERFUL first experience with my spirooli. I WOULD recommend using a utensil (ie brush) to clean the blades. And I HIGHLY recommend the spirooli and can’t wait to make curly fries with potatoes too! ๐Ÿ™‚ ๐Ÿ™‚ ๐Ÿ™‚ ๐Ÿ™‚

  2. G’day Joanne! It’s so funny that you don’t open you package right away — I do the same thing. I buy something for a specific purpose but I wait to open it until the time ‘is right’. I think I’m going to have to make your delicious salad. I use coconut milk often and never thought to use it for a dressing. What a delicious tropical salad this will be.

    • Thanks Julie! Was a USER error and NOT a gadget error!!! I used the gadget today as when one falls off a horse, is always best to get back on “right away” ๐Ÿ˜‰

      Today, I “knew” where to keep my hands away! If my blog post helps even one person make the same novice mistake I made, then it will be “well worth it” sharing the pain today! ๐Ÿ˜‰
